Zacapa is an exceptional rum distillery from Guatemala, globally recognized for the quality and authenticity of its products. Its uniqueness lies in the exclusive use of concentrated cane juice combined with natural yeasts extracted from pineapples, ensuring natural fermentation and a rich, complex aromatic profile. The fermented juices are then slowly distilled in a unique copper column still, preserving all the original flavors. Afterwards, the spirits are aged at over 2,300 meters altitude in exceptional cellars, where the cool climate and pure air contribute to a slow and optimal maturation, giving Zacapa rum unparalleled quality and deep aromas.
The Zacapa Edicion Negra rum owes its name to its ultimate aging process, which is based on a careful blend of rums aged from 6 to 24 years, matured according to the ancestral solera method. This traditional Spanish technique involves aging in barrels of American bourbon, European wines, and Spanish sherry. The barrels are stacked on several levels, from youngest to oldest, where young rums are poured at the top and gradually descend through the layers. At each level, the evaporated portion – called the "angel's share" – is compensated by rum from the upper level, creating a harmonious blend of rums of various ages. This complex and refined aging concludes with a final maturation in ex-American Bourbon and ex-Pedro Ximénez barrels, further enhancing the richness and depth of aromas as well as the smoothness on the palate.
