Ron Abuelo embodies the excellence of Panamanian rum and pays vibrant tribute to Don José Varela Blanco, a pioneer who left Spain in 1908 to establish the first sugarcane plantation in Panama. Since 1936, the distillery has produced exceptional rums by mastering the entire process, from harvesting the sugarcane to bottling, thus ensuring optimal quality and rigorous control at every stage.
The secret of Ron Abuelo lies in the use of a concentrated base syrup, called "miel de caña," made from freshly pressed sugarcane juice, to which pure water from their own well and locally cultivated yeasts are added. After carefully controlled fermentation, the mash is distilled in a unique column still, renowned for preserving the delicate aromas and rich taste of the rum. The resulting rum is then patiently aged in small ex-Bourbon oak barrels, which gives it an incomparable depth of flavor. For their most prestigious batches, Ron Abuelo applies the traditional Solera method, thus enhancing the aromatic evolution over the years.
Each batch of barrels is meticulously selected before being blended and transferred into a larger cask for additional maturation. The natural alcohol content upon leaving the cask, around 65%, is then adjusted with pure demineralized water to reach a perfect balance of 40%, enhanced by a touch of sugar that guarantees a velvety and harmonious sensory experience.
