The Kilchoman Distillery was founded in 2005 at Rochside Farm, located near Machir Bay on the iconic west coast of the island of Islay, in Scotland. This artisanal distillery was created by Anthony Wills, a passionate former wine industry expert, determined to develop an authentic, traditional, small-scale whisky production. Later, Mark and Rohaise French, owners of Rochside Farm, adopted a philosophy focused on the exclusive use of local raw materials, further strengthening the distillery's sustainable and artisanal approach.
The company is fully vertically integrated: barley is grown locally, malted on site, and the entire maturation and bottling process is carried out within the distillery itself. The water needed for production comes from a pure spring located on the flank of Cnoc Dubh, just above Rochside Farm. The Kilchoman Single Malt is distinguished by the absence of chill filtration and the prohibition of adding caramel coloring, thus ensuring a natural and rich taste. The standard whisky is matured to 50% alcohol by volume (ABV), adjusted with pure Islay water. Distillations began in November 2005, with 80% of the spirit aged in ex-Bourbon barrels from the Buffalo Trace distillery in Kentucky, while the remainder matures in Oloroso sherry butts (250 liters) from the Miguel Martin Bodega in Spain. In addition to these casks, Kilchoman also experiments with rare casks such as Sauternes, red wine, rum, port, Madeira, or Cognac, with some secret barrels reserved for limited editions. Production is deliberately limited to the distillery's two traditional stills, with a maximum annual capacity of only 90,000 liters, thus ensuring exceptional whisky and controlled quality.
This rare and prized expression of 14 years of age was distilled precisely on April 20, 2006. It is an integral part of the prestigious Family Cask Collection, a single bourbon barrel hand-selected by Anthony Wills, visionary founder of the Kilchoman Distillery.
