This rum traces its origins back to 1710 thanks to the visionary foresight of Jean Assier. Today, it is his direct descendant, Yves Assier de Pompignan, who carries the new dynamic philosophy driving the distillery and the Habitation du Simon, now taken over by the house Clos des Spiritueux. This unique distillery is equipped with a singular Charentais copper still, featuring 7 plates, poetically named "Belle Aline." Located in the heart of an idyllic setting, surrounded by lush sugarcane fields, a passionate team intervenes by hand at every meticulous step of crafting these exceptional rums: from the field to bottling, ensuring incomparable artisanal quality. Cheval Bon Dieu is a refined blend of rums aged between 18 and 36 months in French and American oak barrels, imparting a unique aromatic complexity. Cheval Bondieu – or Chouval Bondié for the initiated, and known as Phasme in more scientific circles – is a legendary and emblematic figure rooted in Martinican culture, embodying lightness, elegance, and a woody charm fully reflected in this prestigious cuvée.
The nose, both expressive and round, captivates with enchanting aromas of ripe fruits and fresh sugarcane, before evolving towards delicate notes of golden honey and warm spices reminiscent of gingerbread. On the palate, the attack is frank and dynamic, revealing a complex flavor palette with deep notes of blackcurrant, subtle empyreumatic touches of roasted coffee, and a gourmand sweetness of vanilla. The sugarcane, A1710's inimitable signature, manifests here with elegance.
