The A1710 rum embodies a decidedly modernist spirit, harmoniously combining the richness of Martinican tradition with distillation innovation to offer an authentic, refined, bold, and truly exceptional white rum.
This cuvée traces its origins back to 1710, thanks to the patient determination of Jean Assier. Today, his direct heir, Yves Assier de Pompignan, carries forward the new innovative and sustainable philosophy of the distillery as well as the Habitation du Simon, recently integrated into the Clos des Spiritueux brand. The distillery is equipped with a unique Charentais copper still, featuring 7 plates, affectionately named "Belle Aline."
A1710 takes a new step with its exclusive range of organic white rums (Ecocert certified), called "La Perle Rare." The sugar canes are carefully hand-harvested from the organic plots adjacent to Habitation du Simon, ensuring optimal traceability and quality. This limited Perle Rare R579 cuvée owes its name to the precious red cane variety R579 used exclusively in its production. The 2018 vintage was produced in a very limited series of only 1,283 numbered bottles, making each bottle unique and precious.
True to tradition, the cane leaves are manually harvested and crushing takes place the same day, ensuring the freshness of the juice. The slow fermentation of about 5 days occurs under controlled temperature before meticulous distillation in the famous "Belle Aline" still. The result is an exceptional white rum with a rich and varied aromatic profile, meticulously crafted by Stéphanie Martin and her team. Its exuberant aromatic palette, both complex and perfectly balanced, reflects the uniqueness and the unique terroir of the Red Cane R579, for an unforgettable tasting experience.
