Wemyss Malts (pronounced "Weyms' Malts") is a renowned independent Scottish bottler known for its premium quality whiskies. Founded in 2005 by the dynamic brother and sister duo William and Isabella Wemyss, this house draws its roots from a family history deeply embedded in Scottish whisky tradition. Indeed, it was on their lands in the Kingdom of Fife that the historic Haig distillery was established as early as 1840, marking the beginning of a prestigious heritage. The region's exceptional terroir, ideal for cultivating excellent barley, continues to supply the best grains to maltsters, thus ensuring an exceptional raw material for whisky production. Inspired by his experience with master wine blenders in southern France, William Wemyss aimed to create bold, unique, and characterful Scottish whiskies. Meanwhile, Isabella Wemyss rigorously selects Single Malts from Scotland and the most prestigious casks from around the world. In collaboration with their trusted Master Blenders, they craft innovative and flavorful blends that reflect the best of tradition while exploring new flavors.
Doocot is an exceptional Single Malt from the Lowlands, made from barley carefully cultivated locally within the distillery located in the Kingdom of Fife. This whisky stands out for its refined maturation, mainly in ex-Bourbon casks (90%) which impart a characteristic vanilla sweetness, complemented by finishing in Portuguese red wine STR* casks (10%) that enrich its aromatic profile with unique fruity and spicy notes.
