The Port of Leith Distillery is an innovative and iconic Scottish distillery, ideally located in Edinburgh, in the historic and vibrant district of Leith. Founded by visionaries Ian Stirling and Paddy Fletcher, it was officially inaugurated in October 2023 after four intense years of construction and development. Recognized as the first vertical distillery in the United Kingdom, it rises over nine floors and reaches an impressive height of 40 meters. This unique architecture, designed to optimize space in an urban environment, incorporates a unique gravity-based production process where malting begins on the upper floors, allowing the whisky to gradually descend by gravity until barreling. This innovative system significantly contributes to reducing energy consumption and promotes sustainable and responsible practices, notably through the use of renewable energy and drastic reduction of plastic waste, thus reinforcing its eco-responsible commitment.
Whisky production began in 2024. However, due to the legal minimum aging of three years for spirits, the distillery has diversified its offer by also providing a refined range of exclusive products, such as the aromatic Lind & Lime gin, as well as selected vintages of Oloroso sherry and Tawny port, crafted in collaboration with prestigious and internationally recognized producers.
