Zacapa is a rum distillery from Guatemala which is particularly famous today. The specificity of the distillery is to use concentrated cane juice and natural yeasts extracted from pineapple . Once fermented, the juices are distilled in a single copper column still and then the eaux-de-vie are transported to be aged in the cellars located at more than 2,300 meters above sea level.
The Royal Edition is a Gran Reserva produced in small quantities and aged in Solera. In a Solera system , the barrels are organized in tiers, from the youngest to the oldest. Thus, the young rums are sung on the highest floor then as the years go by, the part of the rums evaporated in the lower floors (part of the angels) is supplemented by the rums of the upper floors. Thus, the rum descends the floors of the barrel as it ages and the level closest to the ground, called Solera, is a mixture of rums of different ages. It is then refined in French oak barrels from the "Bois du Roy".
