Capovilla is an exceptional artisanal Italian distillery located in the historic cellars of Villa Dolfin Boldù in Rosa, near Bassano del Grappa, close to the magnificent city of Venice. Founded by Vittorio Capovilla, a former mechanic turned world-renowned master distiller, this house embodies excellence and expertise in distillation.
Since 1976, Vittorio Capovilla has continuously innovated by experimenting with exclusive distillation, preservation, and reduction techniques, protected by numerous patents, to ensure unparalleled purity and finesse in its spirits. The distillery's signature lies in its unique ability to extract the quintessence of the fruit and grape marc, thus revealing intense and refined aromas.
Known for its minimal use of sulfur dioxide, Capovilla exclusively favors very ripe fruits grown in its own vineyards, spanning four hectares certified in organic farming. The distillery rigorously selects old varieties of plums, pears, and peaches, among others, now rare but known for their gustatory excellence.
This rare eau-de-vie is made from the Mirabelle "Susine" harvested in 2011. The limited production of only 369 numbered bottles guarantees unique exclusivity and traceability, making this reference a true gem for connoisseurs of superior quality eaux-de-vie.
