The Clos des Spiritueux Distillery is located in Saint-Jean de Minervois, in the heart of the Hérault. This unique artisanal micro-distillery was passionately founded by Patricia and Laurent Gaspard in the village, where they craft exceptional eaux-de-vie that are fresh, pure, and intensely aromatic. Their expertise is based on an exceptional still made in the renowned workshops of Jean-Louis Stupfler, whose reputation for excellence extends to the most prestigious French and international distilleries. This copper pot still with direct fire requires rigorous technical mastery, allowing precise and controlled cooking of raw materials, thus promoting optimal and fine extraction of the most complex aromas.

The couple selects only fruits strictly from organic farming, healthy and harvested at full maturity to ensure exceptional quality and taste. Their approach focuses on respect for the terroir, ancestral traditions, and the natural cycles of the seasons. Each apricot is pitted by hand, the marc is carefully destemmed, and no step is mechanized, thus fully preserving the organoleptic qualities. The distillates undergo no filtration, and only the noble fractions, that is, the hearts of the distillation, are kept after removing the heads and tails, resulting in naturally low yields but with purity and finesse that are incomparable.
