The Distillerie Cazottes is ideally located in Villeneuve-sur-Vère, in the beautiful department of Tarn. Under the passionate leadership of Laurent Cazottes, heir to an authentic savoir-faire of a traveling distiller, this distillery is fully committed to a sustainable approach through rigorously managed organic farming enriched with environmentally respectful biodynamic practices. The estate has about 600 pear trees of the famous Williams variety, 200 greengage plum trees (Reine Claude Dorée), as well as several hectares of vines planted since 2010. Distillerie Cazottes offers a refined range of eaux-de-vie, artisanal liqueurs, natural aperitifs, and authentic wines, reflecting their exceptional terroir.
This premium eau-de-vie is made exclusively from overripe Williams pears, harvested after more than a month of optimal ripening. Each pear is carefully sorted and hand-stemmed to ensure impeccable quality: the eyes, seeds, and blemishes are meticulously removed by hand to guarantee unmatched taste purity. After gentle crushing, natural fermentation begins without any chemical additives and lasts for 6 weeks, allowing a rich and balanced aromatic development. The slow distillation, carried out with precision, extracts the best from these noble fruits. The eau-de-vie is then aged in demijohns for optimal refinement before being bottled to order, ensuring freshness and quality in every bottle.
