\nThe Saint-James Distillery is located in Martinique, an exceptional terroir renowned for its outstanding agricultural rums. Its fascinating history begins with Reverend Edmond Lefébure, then Superior Father at the Brothers of Charity convent and a passionate chemist. Quickly, he recognized the unique potential of the eaux-de-vie derived from sugarcane distilled near his hospital and decided to produce these precious rums himself. The adventure continued, and in 1973, the Cointreau company acquired the Saint-James Rums, centralizing all production in Sainte-Marie. In 2003, the distillery joined the La Martiniquaise group, its current owner, guaranteeing traditional expertise and impeccable quality.
\nSaint James rum is made from the fermentation and then distillation in a Creole column of pure sugarcane juice, an ancestral method recognized by the A.O.C. Rhum de la Martinique. This exceptional process gives Saint James rums a rich and complex aromatic palette, ideal for aging in carefully selected oak barrels. No sweeteners are added, thus ensuring absolute authenticity. Proud of its commitment to environmental sustainability, the distillery optimizes its processes: local sugarcane plantations reduce logistical routes and their CO2 emissions, while bagasse, the fibrous residue of the cane, is used as fuel for steam production necessary for distillation and cane crushing. Part of this bagasse is converted into compost or transformed into electricity via a turbo-alternator. Finally, vinasse, the liquid residue of distillation, is methodically treated to naturally irrigate the cane fields, thus closing a virtuous cycle respectful of nature.
\nThe Cuvée La Salle pays tribute to the Habitation La Salle, a former distillery acquired by Saint James, famous for its historical production of tafia. The aged rums selected for this unique cuvée have been carefully chosen by the oenologist and cellar master of Saint James. Distilled in a Creole column in Sainte-Marie from pure cane juice, these rums benefit from expert aging of 6 years in oak barrels, revealing deep aromas and remarkable finesse.
