The Domaine des Hautes Glaces is located at 896 meters altitude, in the heart of the Dévoluy Massif, in the majestic Hautes-Alpes. Founded in 2009 by Frédéric Revol, an agronomist passionate and specialist in living systems management, this estate is committed to producing exceptional whiskies while respecting the environment. Its innovative approach aims to promote the natural fertility of soils and significantly reduce the carbon footprint. Today, the distillery masters all production phases with excellence, following a strictly organic approach. The selected cereals come from five plots with varied climatic and geological characteristics, guaranteeing the unique aromatic richness of each batch. Fermentation is carefully monitored and lasts about a week. Distillation is carried out in two pairs of traditional Charentais pot stills with direct flame: a 2,500-liter wash still and a 700-liter spirit still, symbolizing a rare and precious artisanal know-how.
Moissons Malt represents the first of the estate's two emblematic cuvées. This micro-cuvée is made exclusively from a high-quality malted barley. It results from a meticulous blend of 11 casks, combining whiskies from 4 distinct plots (Andrieu, Gabert, Saint-Jean, and Vulson), enriched by the diversity of 6 vintages (2011, 2012, 2013, 2014, 2015, and 2016). The aging lasts from 4 to 9 years in carefully selected French oak barrels, including coarse grain and barrels that previously held Cognac, Armagnac, and wine, bringing complexity and aromatic richness.
