Ailsa Bay is an exceptional whisky distillery, founded in 2007 by the prestigious group William Grant & Sons, located on the iconic site of the Girvan grain distillery, in the famous Lowlands region of Scotland. Its name pays tribute to a picturesque island located off Girvan. Built in a record time of six months, this innovative distillery has been operational since September 2007. Initially, the whisky produced was intended only for the creation of blends and was not to be marketed as a Single Malt under its own brand.
Ailsa Bay revolutionizes the whisky world by pioneering the analytical measurement of sweetness, a novel concept established by the renowned master blender Brian Kinsman. The whisky is characterized by a precise index of 19 sppm (sweet ppm), guaranteeing a perfect balance between peaty power and delicate sweetness. The peat level is precisely dosed at 22 ppm. Ailsa Bay also stands out as the only Scottish whisky to benefit from the innovative process called "Micro Maturation". This unique process involves initially aging the distillate in small Hudson Baby Bourbon barrels, ranging from 25 to 100 liters, for a rapid period of 6 to 9 months. These smaller barrels allow for accelerated and intense maturation, imparting a unique aromatic richness. Then, the whisky is transferred for extended maturation in virgin American oak barrels, first-fill barrels, and multiple-fill barrels, ensuring complexity and depth in aging.
