Ninkasi was created in 1997 in Lyon, founded by 3 young passionate entrepreneurs freshly graduated with a clear ambition: to introduce the innovative concept of American craft microbreweries on French soil and to launch the flourishing craft beer movement. This emblematic company upholds strong and sustainable values such as local emergence, short supply chains, as well as the unique blending of trades, audiences, and styles. Building on their rapid success in brewing, and convinced that whisky is intimately linked to beer, the distillery was established in 2014, with the first whiskies released three years later. Indeed, the production of these two spirits relies on common raw materials: malted barley, natural yeasts, pure water, and the magic of fire. The exceptional site in Tarare, located in the Rhône, offers ideal conditions for crafting exceptional whiskies, notably benefiting from water of remarkable quality.
The Ninkasi Single Malts are produced in exclusive small batches, called "Tracks", while promoting a local and sustainable approach through short supply chains. Each bottle embodies a unique artisanal know-how in the art of malted barley, perfected since the first brews of 1997, and enriched by controlled aging in wine barrels from prestigious terroirs of the Lyon region. Today, the cellar houses more than 112 barrels maturing, including various malt varieties as well as barrels from renowned appellations such as Condrieu, Pouilly-Fuissé, and Pinot Noir.
Ninkasi Whisky Experience Pinot Noir Finish was barreled on June 7, 2017, before being bottled on September 18, 2020. This fourth flagship whisky was made exclusively from Pilsen malt. It aged for two and a half years in barrels that previously held white wine from Château de Beauregard, known for their fine grain and medium toast that brings finesse and complexity. The whisky then benefited from a unique 5-week finish in large-grain American white oak barrels that previously held Pinot Noir, giving it fruity and delicately woody notes.
