DAFTMILL - 11 years old - Vintage 2009 - Sherry Oloroso - 60.6%<\/strong><\/span><\/p>
Daftmill<\/strong> is an authentic family farm nestled in the beautiful Howe of Fife<\/strong> region, in the heart of the Lowlands<\/strong> in Scotland<\/strong>. This sustainable farm not only produces fresh vegetables such as carrots, broccoli, and potatoes, but also grows high-quality cereals, mainly brewing barley, while raising beef cattle. In June 2003, brothers Francis and Ian Cuthbert<\/strong> applied for a license to convert the old mill buildings into a craft distillery. Renovation work and installation of specific equipment took place from 2004 to the end of 2005, during which their official distillation license was obtained. Except for the stills (a 3,000-liter and a 2,000-liter) and the mash tun supplied by the renowned coppersmith Forsyths based in Rothes, all other fittings and installations were carried out by local craftsmen from the Cupar area, thus ensuring a 100% local and artisanal production. The first Daftmill whisky was distilled on December 16, 2005, making this distillery the newest to open in Scotland at that time. The first bottles were marketed in May 2018. At Daftmill, the barley grown on-site and the pure water from a private well are the essential foundations for making their exceptional whisky. The distillery operates on a seasonal schedule perfectly synchronized with agricultural cycles. During winter, when farming tasks are lighter, Francis and Ian focus on distillation. In spring, intensive work resumes with barley sowing, potato planting, and moving cattle to pasture. In summer, after another break from farming work, they distill again in June and July before pausing activities for the autumn harvest. This traditional method, abandoned in Scotland for over a century, allows producing a small, very exclusive annual quantity limited to 100 casks<\/strong>.<\/p>
Daftmill 2009 Single Cask 028\/2009<\/strong> is made exclusively from the Optic barley variety, carefully grown in the farm's fields and harvested during the last week of August 2006. The barley is then stored on-site before being malted in Alloa during summer 2007. The expert team at La Maison du Whisky<\/strong> selected a first-fill Oloroso Sherry cask<\/strong> for aging this unique whisky. Distillation took place during the summer season, with cask filling on July 8, 2009, followed by an exclusive bottling for La Maison du Whisky, limited to only 649 numbered bottles<\/strong>.<\/p>
