The Caol Ila<\/strong> distillery is located on the iconic island of Islay<\/strong>, in Scotland<\/strong>, world-renowned for its exceptional Single Malts. It is the largest Single Malt distillery on the island in terms of production capacity, established in 1846 near Port Askaig. Today, part of the prestigious Diageo<\/strong> portfolio, it largely supplies the famous blends market, notably Johnnie Walker. To meet strong demand, the old distillery was demolished in 1974 in favor of a more modern and larger facility. Since 2010, its production has seen impressive growth, rising from 3.5 to 6.5 million liters per year.<\/p>
Historically, Caol Ila Single Malts were available exclusively through independent bottlers until 2002, the year the distillery finally marketed its own 12-year-old Caol Ila. Locally malted barley from Port Ellen, combined with notably large stills filled only halfway, allows optimal contact between alcohol vapor and copper, giving Caol Ila a unique profile. Unlike most Islay whiskies, which have intensely peated notes, Caol Ila offers a nose and palate with a subtle smoky character, delicately balanced. Some non-peated expressions are also occasionally produced, reassuring lovers of aromatic diversity.<\/p>
This precious edition is an exclusive from La Maison du Whisky<\/strong>, part of the Plume Collection<\/strong> which highlights rare and singular Single Malts. Distilled in 2012, this whisky was aged entirely for 8 years<\/strong> in carefully selected Sherry casks<\/strong>, enhancing the rich fruity and spicy notes typical of this type of maturation.<\/p>
