The prestigious Caol Ila<\/strong> distillery is located on the mythical island of Islay<\/strong>, in the heart of Scotland<\/strong>. Recognized as the largest Single Malt distillery on this wild island in terms of capacity, Caol Ila combines tradition and modernity. Founded in 1846 near Port Askaig, this emblematic distillery is now part of the extensive portfolio of the international group Diageo<\/strong>. A significant portion of its production is dedicated to famous blends, notably Johnnie Walker. Facing growing demand, the old distillery was demolished in 1974 to make way for a larger facility, thus increasing production. Since 2010, the annual capacity has nearly doubled, from 3.5 million to 6.5 million liters.<\/p>
Until 2002, Caol Ila Single Malts were exclusively distributed through independent bottlers. Since that date, the house has marketed its iconic Caol Ila 12 years old. The malted barley used comes from Port Ellen, with stills much larger than those in other Islay distilleries. These are only half-filled, promoting intense contact between alcohol vapor and copper, which gives Caol Ila expressions a less peaty signature but with a subtle, refined, and distinguished smoky character<\/strong>. Non-peated versions also occasionally appear to vary the pleasures of enthusiasts.<\/p>
The Distiller’s Edition 2007<\/strong>, an exceptional vintage, is a 12-year-old Single Malt, benefiting from exceptional maturation in refined Moscatel casks<\/strong> before bottling in 2019. The precise cask number is C-si: 6-479<\/strong>, guaranteeing the authenticity and rarity of this gem.<\/p>
