The Caol Ila distillery is located on the island of Islay, in Scotland, globally renowned for its exceptional Single Malts. It is the largest Single Malt distillery on the island in terms of production capacity. Founded in 1846 near Port Askaig, this iconic distillery is now part of the prestigious Diageo portfolio. A significant portion of its production is used in the creation of famous blends, notably Johnnie Walker. In response to growing demand, the old distillery was demolished in 1974 to make way for a larger and more modern facility. Since 2010, Caol Ila's production has nearly doubled, increasing from 3.5 million to 6.5 million liters per year, highlighting its key role in the Scottish whisky industry.
Caol Ila Single Malts were previously available only through independent bottlers until 2002, the year the official 12-year-old Caol Ila was launched. The malted barley is produced at Port Ellen, while the stills, larger than those of other Islay distilleries, are only half-filled. This unique method allows increased contact between the alcohol vapor and the copper, giving Caol Ila whiskies a distinctive aromatic profile. Unlike other Islay Single Malts, Caol Ila expressions have a more subtle peated character. Additionally, non-peated versions are sometimes offered, providing a diversity appreciated by enthusiasts.
