Capovilla is a renowned artisan Italian distillery, nestled in the historic cellars of Villa Dolfin Boldù in Rosa, near Bassano del Grappa and not far from Venice. Founded by Vittorio Capovilla, a mechanical engineer who became one of the most respected master distillers in the world, this distillery combines passion and expertise since 1976. Vittorio Capovilla distinguished himself through his innovative approach to distillation, filing numerous patents aimed at perfecting distillation, preservation, and reduction techniques. His goal is to achieve absolute purity in his spirits to extract the authentic quintessence of the fruit as well as that of the highest quality grape marc.

The Capovilla distillery is also known for its environmentally and health-conscious method, with an extremely low use of sulfur dioxide, thus ensuring natural and preserved brandies. The fruits used are only picked at perfect ripeness from its own certified vineyards, among which four hectares are officially dedicated to organic farming. The estate has carefully selected ancient and rare varieties of plums, pears, and peaches, recognized for their unmatched taste excellence, to offer exceptional spirits rich in complex and subtle aromas.
