Domaine Roulot - Pear Eau de Vie
Domaine Roulot is ideally located in Meursault, in the heart of the prestigious Côte de Beaune in Burgundy, a region world-renowned for the exceptional quality of its vineyard terroirs. A family property owned by Jean-Marc Roulot and his sister Michèle Javouhey Roulot, the domaine is recognized not only for its exceptional wines but also for its artisan fruit eaux-de-vie and liqueurs of remarkable finesse. The distillation activity, rooted in a strong family tradition, dates back to the mid-19th century: the copper still currently used belonged to Jean-Marc Roulot's grandfather and then his father, both "traveling distillers." Originally focused on Burgundy pomace, this tradition has modernized while respecting a unique ancestral know-how. Today, the range consists of two eaux-de-vie and one exceptional liqueur. Committed to sustainable practices, the domaine has been certified organic since 2013 and applies biodynamic practices, thus promoting biodiversity and soil health, although these are not yet certified.
The Pear Eau de Vie is carefully crafted from carefully selected Yellow Williams Pears, naturally fermented and then distilled only once to preserve all their purity and fruity aromas. This refined eau-de-vie is then transferred into demijohns for a long and delicate aging, of at least 5 years and up to 8 years, giving it an incomparable aromatic complexity and roundness on the palate.
