Rhumrhum is one of the most recent and innovative distilleries in the Caribbean, founded in 2006 thanks to the prestigious alliance of major rum players: Velier, Capovilla, and Bielle. Although independent, it is housed within Bielle, relying solely on it for the supply of fresh and natural cane juice. This distillery stands out for a revolutionary vision aimed at elevating agricultural white rums to the top of their category, thanks to unique expertise and rigorous artisanal processes. For example, the cane juice is fermented without prior dilution with water, unlike most standard practices, and the fermentation is carefully controlled to last slowly between 7 and 9 days, which gives its rums an aromatic complexity of exceptional richness.
The vesou is then subjected to a double pot still distillation, carried out in two copper stills heated by a water bath, an exclusive technique developed by Bernd Müller. Some of these rums are aged in carefully selected barrels, including former bourbon, Burgundy, and Sauternes casks, thus bringing unique notes and incomparable depth to these exceptional spirits.
