TORABHAIG - Legacy Series No. 3 - Cnoc Na Moine - 46%
The Torabhaig Distillery is located in the picturesque village of Teangue, nestled on the shores of the Sound of Sleat on the splendid Isle of Skye in Scotland. Founded by Mossburn Distillers in January 2017, it is one of the most innovative and recent distilleries in the Scottish landscape and represents the second distillery established on this iconic island. Set in a traditional abandoned 19th-century farm near the Allt Gleann stream, the distillery underwent meticulous renovation over four years to combine heritage and modernity. Its mash tun has a brewing capacity of 1.5 tonnes of malt, while eight fermentation vats made of Douglas pine were carefully selected and installed. Distillation relies on two copper pot stills named Sir Iain and Lady Noble, which allow the production of a remarkably peated and among the most phenolic distillates in Scotland. Production is managed by a compact local team of nine passionate distillers, most of whom are novices in the industry, thus ensuring freshness and innovation in every process. The whiskies are patiently aged in carefully chosen oak casks, mostly former American bourbon barrels, sometimes complemented by sherry hogsheads, virgin French oak barrels, and other rare types of casks, giving this expression a unique aromatic complexity.
Each edition of the Legacy series reveals a unique facet of the new whisky exclusive to the Isle of Skye. Cnoc Na Moine is made from Concerto barley, meticulously selected for its exceptional malting qualities. This exceptional whisky has matured in American oak casks previously seasoned with Oloroso and Pedro Ximénez sherry, as well as ex-bourbon casks, which confer remarkable aromatic richness and roundness.
