Balcones Distilling is an iconic distillery located in the heart of Texas, United States. Founded in 2008 by the enthusiast Chip Tate, it was established in a former welding workshop nestled under a bridge in Waco. After a full year of meticulous work – replacing the roof, demolishing walls, laying bricks, and installing pipes – Chip Tate equipped his distillery with copper stills imported from Portugal. The first distillations began in 2009, with a rigorous selection of high-quality ingredients from various origins: from blue corn grown in New Mexico to the first local malted barley from Texas. Thanks to this commitment and passion, Chip Tate's whiskey met with rapid success upon its market debut in 2010, appearing on shelves in ten American states. In 2012, facing the need for development, Chip Tate brought in an investor, Gregory Allen. Following disputes, Chip Tate sold his shares, was dismissed, and subjected to a non-compete clause until March 2016. Today, distillation is led by master distiller Jared Himstedt, who ensures the quality and authenticity of the spirits produced.
