Balcones Distilling is an iconic distillery located in the heart of Texas, United States. Founded in 2008 by the passionate Chip Tate, it was born in a former welding workshop under a bridge in Waco. After an intense year dedicated to renovation – replacing the roof, demolishing walls, laying bricks, and installing piping – Chip Tate installed his copper stills imported from Portugal, thus creating an exceptional craft distillery. The first distillations took place in 2009, highlighting a rigorous selection of high-quality and original ingredients, such as blue corn grown in New Mexico and the very first local malted barley from Texas. The passion and expertise quickly bore fruit, as by 2010, the whisky met with resounding success, distributed in ten American states. In 2012, to support its development, Chip Tate called on investor Gregory Allen. Following disagreements, Chip Tate withdrew, selling his shares, and remained subject to a non-compete clause until 2016. Today, Jared Himstedt holds the reins as master distiller, ensuring constant quality and innovation.
Recognized as the first Texas whisky launched on the market after Prohibition, Baby Blue stands out for its unique production from roasted blue corn. This exceptional corn, rich in oils and very aromatic, gives the whisky an incomparable complexity and richness, while elegantly renewing the American tradition of corn whisky. Decidedly young and fresh, Baby Blue expresses delicate toasted notes and refined depth that appeal to both amateurs and connoisseurs.
Non-Peated – Whisky produced by traditional distillation, without peat influence, for a purely authentic taste.
