The Stauning Distillery is a key reference in the world of craft whiskies in Denmark. Founded in May 2005 by nine Danish whisky enthusiasts — a doctor, a chef, a butcher, a teacher, a helicopter pilot, and four engineers — this distillery aims to recreate an exceptional peated whisky comparable to the famous whiskies from the Isle of Islay in Scotland. The first distillation took place in August 2006, marking the beginning of rigorous test production, enriched by constant improvements and process optimization. From autumn 2006, the globally recognized expert Jim Murray tasted their new make, giving a very favorable opinion and recommending increasing production. This rose from the initial 200-400 liters to 6,000-8,000 liters of whisky per year, highlighting the rise of this innovative Danish distillery.
The grain used (rye and barley) is carefully selected from local producers, respecting a sustainable and authentic approach. Traditional malting is done on the floor, following the ancient Scottish method. The malt is dried in a kiln using hot air blown from below, ensuring optimal evaporation. To bring this unique peated signature, local peat from the nearby peat bog is used to smoke the malted grains. After grinding and crushing, the grain is set aside for a 3-day maturation before distillation. The first run is done in a 1,000-liter still, followed by a second distillation in a 600-liter still. This double distillation process guarantees finesse and aromatic complexity. The new make is then aged in oak barrels, maturing for a minimum of 3 years before meticulous bottling.
This prestigious edition is a perfect blend of rye and malted barley whisky, distilled twice in flame-heated pot stills, reflecting a rare traditional know-how. It benefits from 3 to 4 years of aging in American oak barrels, giving the whisky rich, woody, and subtly smoky notes, ideal for discerning lovers of exceptional spirits.
