The Cotswold Distillery is ideally located in the heart of the picturesque Cotswolds countryside, a renowned rural region in southern England spanning six prestigious counties. Founded in 2014 by the visionary Daniel Szor, this craft distillery quickly established itself thanks to the exceptional quality of its products, notably its Dry Gin and outstanding Single Malt whiskies. The distillery benefited from top-level technical support with the expertise of Harry Cockburn, a recognized master distiller and former production director at the famous Bowmore distillery, as well as Dr. Jim Swan, a global specialist in barrel maturation techniques. The latter notably worked alongside prestigious brands such as Penderyn in Wales, Kavalan in Taiwan, and The Milk & Honey Distillery in Israel, ensuring optimal mastery of aging processes for a unique result.
The commitment of the Cotswold distillery is based on the exclusive use of high-quality local barley, harvested in the region and transported to the historic maltings of Warminster, recognized as the oldest still operating in the UK. The distillation process starts with a 2500-liter copper still made by Forsyths in Rothes, allowing a careful double distillation to extract the best flavors. After the first distillation, only the best fractions of the Low Wines are carefully selected before a second distillation in a 1600-liter still, aiming to produce a whisky of remarkable purity and finesse.
This refined expression is a harmonious blend of Cotswold Single Malt Whiskies, fully matured in a combination of American and Spanish oak casks, enriched with Sherry butts carefully seasoned with Oloroso and Pedro Ximenez. This maturation method brings exceptional aromatic complexity, mixing rich and fruity notes with a subtle woody sweetness. A limited edition with only 9,900 bottles was produced, guaranteeing rarity and premium quality for discerning enthusiasts.
