The Hwayo Distillery, located in the picturesque Yeoju province near Seoul in South Korea, is a key reference in the world of Korean whisky. Originally specialized in producing soju, a traditional and highly appreciated Korean spirit, it has distinguished itself by becoming the only South Korean distillery to produce whisky. Even more remarkable, Hwayo is a pioneer in creating a whisky made exclusively from rice, an unusual ingredient in the whisky world. Master distiller Saehee Moon leverages ancestral knowledge passed down through the art of soju making to craft a unique, innovative, and highly refined whisky.
Hwayo X.Premium is made from Japonica short-grain rice, a round and tender variety, polished to 10% to reveal its full purity. The fermentation of the mash is carefully controlled with the addition of exceptional spring water, drawn from 150 meters deep within natural rock formations, along with carefully selected yeasts. These yeasts convert the starch in the rice grains into fermentable sugars. Distillation is carried out in a pot still under low pressure, ensuring aromas of great subtlety and delicacy. This exceptional whisky is then aged in American oak barrels, which gives it a unique aromatic complexity.
