Daftmill is an authentic family farm located in the prestigious Howe of Fife, in the heart of the Lowlands in Scotland, a region renowned for its exceptional whiskies. This diversified farm produces fresh vegetables such as carrots, broccoli, and potatoes, primarily grows brewing barley for its spirits, and raises quality livestock for meat. In June 2003, enthusiasts Francis and Ian Cuthbert obtained the building permit to transform the old mill buildings into an innovative distillery. From 2004 to the end of 2005, meticulous renovations and installation of state-of-the-art equipment were carried out in collaboration with local craftsmen around Cupar, highlighting traditional Scottish expertise. They use two metal stills of 3,000 liters and 2,000 liters, as well as a mash tun supplied by the famous Forsyths coppersmiths of Rothes. The first Daftmill whisky was distilled on December 16, 2005, making the distillery one of the newest to emerge in Scotland at that time. The first bottles were marketed in May 2018, offering a spirit that is both rare and authentic. Daftmill's philosophy is based on artisanal production, using exclusively barley grown on their lands and pure water from their own well. The distillation activity follows a seasonal rhythm perfectly in tune with agricultural work: winter months dedicated to whisky production, followed by spring devoted to cultivation and livestock, then a summer resumption before harvest. This cycle, which had disappeared for a century in Scotland, guarantees a limited production of about 100 casks per year, enhancing the exclusivity and exceptional quality of each batch.
This limited edition Daftmill 2009 is made from the Optic barley variety, carefully grown in the farm's fields and harvested at the end of August 2006. After meticulous storage, the barley was malted in Alloa in summer 2007, ensuring optimal malt quality. The aging was carried out in first-fill Sherry Oloroso casks and three ex-Bourbon casks (numbers 047\/2009, 048\/2009, 050\/2009, and 052\/2009), rigorously selected by the renowned wine and spirits merchant Berry Bros & Rudd. The whisky was distilled and aged from the second week of August 2009, then bottled in 2020, with a very limited production of only 1,785 bottles. This delicate and refined single malt embodies the richness of Scottish lands and unique craftsmanship.
