The Stauning Distillery, globally renowned for its exceptional handcrafted whiskies, is located in the heart of Denmark. Founded in May 2005 by nine passionate individuals from diverse backgrounds — a doctor, a cook, a butcher, a teacher, a helicopter pilot, and four engineers — this distillery aimed from the start to reproduce a whisky with a strong identity, inspired by the famous peated whisky from the Isle of Islay in Scotland. Its first distillation took place in August 2006, followed by a test production with continuous technical improvements to achieve optimal quality. In autumn 2006, the prestigious whisky expert Jim Murray, after tasting the "new make," strongly encouraged the founders to increase their production, which rose from only 200-400 liters to 6,000-8,000 liters per year, thus placing Stauning among the key players in Nordic whisky.
The production process relies on carefully selected raw materials: rye and barley are purchased locally, respecting short supply chains and grain freshness. Malting is done on the floor following ancient Scottish tradition. The malt is then dried using hot air blown from below, while the characteristic smoky flavor of this peated whisky comes exclusively from peat sourced from the nearby peat bog, giving the malted grain an authentic and intense aroma. After grinding and crushing, the mash ferments for 3 days before being distilled twice: first in a 1,000-liter still, then in a second 600-liter still, ensuring finesse and complexity. After distillation, the new make whisky is aged for a minimum of 3 years in carefully selected oak barrels before bottling, ready to captivate the most demanding enthusiasts.
Bastard is a unique rye whisky, aged for at least 3 years in new toasted virgin American oak barrels, known for imparting powerful and vanilla notes. This aging is enhanced by an exceptional finishing of 6 months in old Oro de Oaxaca mezcal barrels from Mexico, giving the whisky unprecedented smoky and spicy aromas, a rare aromatic signature that clearly distinguishes it in the premium peated whisky market.
