Today, approximately 24 hectares of sugarcane are planted and harvested annually to supply the syrup factory, while several specialized varieties of sugarcane are cultivated in a dedicated nursery. These innovative plantations meet the growing needs of the syrup factory as well as the distillery, guaranteeing the quality and continuity of Saint Nicholas Abbey rum production, a symbol of Caribbean authenticity and excellence.
The still, named "Annabelle," was specially designed and manufactured for Saint Nicholas Abbey. This unique equipment allows for light and high-precision distillation, ideal for obtaining a refined and prestigious rum, perfectly suited for aging. Unlike other rums from Barbados that use molasses, Saint Nicholas Abbey rum is made exclusively from cane syrup, following an exclusive artisanal process that gives this rum an exceptional aromatic finesse.
