Daftmill is an iconic family farm located in the heart of the Howe of Fife, in the renowned Lowlands region of Scotland. This sustainable farm produces not only fresh vegetables such as carrots, broccoli, and potatoes, but also cultivates high-quality cereals, mainly brewing barley, and raises livestock for butchery. In June 2003, brothers Francis and Ian Cuthbert obtained a license to convert the old mill buildings into a craft distillery. The careful renovation of the buildings and installation of specialized equipment continued between 2004 and late 2005, when they finally received their official license to begin distillation. Notably, while the stills (a 3,000-liter still and a 2,000-liter still) as well as the mash tun come from the famous coppersmith Forsyths in Rothes, all other equipment and conversion work were entrusted to local craftsmen from the Cupar area, thus ensuring unique authenticity and regional expertise. The first batch of Daftmill whisky was produced on December 16, 2005, making Daftmill the newest distillery to have emerged in Scotland at that time, with the first commercial bottlings released in May 2018. The distillery favors complete autonomy by using exclusively barley grown on-site and pure water from its own well to craft its exceptional whisky. Operating on a seasonal rhythm in harmony with the agricultural calendar, Daftmill alternates between farming and distillation: in winter, when farming work is lighter, the Cuthbert brothers focus on distillation; in spring, they resume barley sowing, potato planting, and livestock pasture management. In summer, after a break, distillation resumes in June and July before stopping again for the harvest. This traditional operation, almost disappeared for a century in Scotland, limits annual production to about 100 casks, making Daftmill a rare and authentic whisky, highly sought after by connoisseurs.
This unique edition of Daftmill presents a 15-year-old whisky, made exclusively from the barley variety "Chariot." Harvested on August 31, 2004, at Dam Park farm and the Curling Pond fields, this barley is among the last malted in Fife by the prestigious Robert Kilgour & Co maltings before its permanent closure. The bottling is strictly limited to 28 casks, all from first-fill ex-Bourbon barrels, distilled in 2006 and bottled in 2022 at cask strength, ensuring richness and aromatic complexity. This Daftmill 15 years represents the pure expression of Scottish terroir combined with the passion and artisanal know-how of the Cuthbert brothers, a true gem for lovers of superior quality whisky.
