Don Fulano is a prestigious brand of artisan Tequila produced in Atotonilco, in the famous Highlands of Jalisco, in the heart of Mexico. This high-quality tequila is the result of the ancestral know-how of the Fonseca family, proud representatives of the fifth generation of agave growers and master distillers. Descended from a line of Portuguese immigrants, the Fonsecas have established themselves as experts in agave cultivation and own one of the main historic bodegas in the city center. Since the late 19th century, they have been cultivating agave to supply the first tequila master distillers settling in this emblematic region. Over the decades, their estate has expanded, making them essential suppliers of premium agave for the best tequila producers of the highlands and valleys of Jalisco. In the 1980s, the Fonseca family acquired the La Tequileña distillery, located in the heart of downtown Tequila, thus beginning a new era of excellence and innovation.
Aware of the importance of mastering every step of production, Enrique Fonseca complemented his Mexican expertise with international training: in France, he deepened his knowledge of wine and its impact on spirits, while in Scotland, he discovered the secrets of distillation and different types of stills to create unique and refined aromatic profiles.
The production method of Don Fulano is based on fermentations both with and without bagasse, a double distillation carried out in copper stills to reveal all the depth and authentic character of the agave. An experimental copper still brings structure and elegance to this exceptional tequila. Maturation is carried out exclusively in French Limousin and Nevers oak barrels, previously containing prestigious wines from the vineyards of Burgundy, the Loire, and Bordeaux, thus imparting complex and refined notes to the tequila. The recipe respects absolute purity with only three ingredients: carefully hand-selected Maduro and Pinto agaves, specific yeast, and pure natural volcanic water.
Don Fulano Fuerte is made from Maduro and Pinto agaves, slowly cooked between 28 and 32 hours, then extracted using a custom-designed screw press to preserve the most delicate aromas. Fermentation lasts 72 to 96 hours in an open tank, promoting optimal flavor development. Distillation is carefully performed in a traditional copper still, followed by maturation of at least 6 months in stainless steel tanks to ensure purity and aromatic intensity.
