El Jimador is a tequila produced by the Casa Herradura distillery , located in the center of the state of Jalisco, Mexico . Recognized as one of the oldest and most prestigious in the country, this brand pays homage to the jimadores, these expert artisans who hand-harvest the blue agave hearts (piñas) after nearly ten years of maturation. The production respects traditional know-how: the piñas are slowly cooked to release their natural sugars, then crushed to extract the mosto, this naturally fermented juice before a double distillation that ensures purity and freshness.

The Blanco version is bottled without aging, thus preserving the liveliness and authentic freshness of the agave.
