The Saint Nicholas Abbey rum is a gem of Caribbean spirits, carefully produced in Barbados, in the heart of the Antilles. Nestled in the hills of Saint Peter, the Saint Nicholas Abbey spans over 160 hectares where lush sugarcane fields, tropical ravines, mahogany forests, and elegant French-style gardens intertwine. Facing the decline of the traditional sugar industry, these lands are now carefully preserved and maintained to ensure sustainable and environmentally respectful production. Currently, about 24 hectares of sugarcane are cultivated and harvested each year to supply both the syrup factory and the distillery, while a dedicated nursery develops specialized varieties to meet the growing needs of the estate.
The artisanal still, named "Annabelle," was custom-designed for Saint Nicholas Abbey to produce a light and refined rum through high-performance distillation. What makes Saint Nicholas Abbey rum unique in Barbados is its exclusive process based on pure sugarcane syrup, unlike most traditional rums made from molasses. This syrup is carefully stored to guarantee continuous production throughout the year, although the local harvest naturally only runs from January to June, thus ensuring exceptional consistent quality.
This exceptional edition celebrates the inauguration of the St Nicholas Abbey Heritage Railway and draws all its essence from the fertile lands of the plantation's sugarcane fields. The fermented syrup is slowly distilled in a pot still, then patiently aged in American white oak Bourbon barrels, exposed to the plantation's mild and stable temperatures. This careful and natural aging gives this artisanal rum a complex and refined character, with a minimum age of 8 years, placing it among the finest premium rums of the Antilles.
