KILCHOMAN - 14 years - 2006 - Single Cask Sherry Hogshead - 54.5% ABV
The Kilchoman Distillery, a handcrafted gem located on the wild island of Islay in Scotland, was founded in 2005 at Rochside Farm, near the famous Machir Bay. Created by Anthony Wills, a former wine industry expert, this distillery stands out for its commitment to traditional, small-scale production, promoting authenticity and local craftsmanship. Mark and Rohaise French, operators of Rochside Farm, have adopted a sustainable approach, using exclusively local ingredients, thereby reinforcing Kilchoman's unique and artisanal identity.
The entire production is fully self-sufficient: the barley is grown and malted directly at the distillery, long maturation takes place on-site, and bottling is carried out with great care. The pure water needed comes from a natural spring on Cnoc Dubh, just above the farm. This Single Malt, unchillfiltered and without added caramel coloring, is standardized at 50% ABV, diluted only with Islay's crystalline water. Since distillation began in November 2005, about 80% of the whisky is matured in ex-Bourbon barrels from the Buffalo Trace distillery in Kentucky. The remaining 20% benefit from aging in 250-liter Oloroso Sherry Butts sourced from Bodega Miguel Martin in Spain.
Besides the classic Bourbon and Sherry casks, Kilchoman also distinguishes itself through innovative experimentation with rare and prestigious casks: Sauternes wines, red wine grape varieties, exceptional rums, Ports, Madeiras, as well as Cognac barrels, not to mention secret experimental series, contributing to the aromatic richness and diversity of its exceptional whiskies. With two traditional stills, the annual production capacity is limited to only 90,000 liters, ensuring impeccable quality and an artisanal character.
This prestigious 14-year-old expression comes from an exceptional Single Cask (No.318/2006), filled on November 8, 2006, in an Oloroso Hogshead, then carefully bottled on August 16, 2021, revealing rare aromatic depth and complexity.
