The Kilchoman Distillery is an essential reference for Islay whiskies, founded in 2005 on the Rochside farm, ideally located near the famous Machir Bay on the west coast of the island of Islay in Scotland. Initiated by Anthony Wills, an expert in the wine industry, this distillery aimed to continue the tradition of small-scale artisanal and local production. Mark and Rohaise French, managers of the Rochside farm, have made it a priority to favor 100% local raw materials, thus reinforcing the philosophy of craft whisky and respect for the unique terroir of Kilchoman.
The operation is completely self-sufficient: barley is grown and malted directly on site, maturation phases take place in the distillery's warehouses, as does bottling. The water used comes from a natural spring nestled on Cnoc Dubh, just above the farm. Kilchoman Single Malt is recognized for its authentic approach with a whisky that is non-chill filtered and contains no added caramel, guaranteeing a pure and intense expression. Its standard strength is 50% ABV, adjusted with the precious water of Islay. Distillation, started in November 2005, reveals a unique spirit with 80% maturation in ex-Bourbon barrels from the Buffalo Trace distillery in Kentucky, and the rest refined in 250-liter Oloroso sherry casks from the Bodega Miguel Martin in Spain. Additionally, Kilchoman also experiments with rare casks such as Sauternes, red wine, rum, Port, Madeira, or Cognac, enhancing its creativity and the aromatic complexity of its limited editions. Its small annual capacity of 90,000 liters ensures controlled quality, thanks to two traditional stills.
This exceptional 13-year-old edition was carefully filled on October 25, 2007, into a unique Single Cask No.362/2007 of the new Bourbon barrel type, before being bottled on August 16, 2021, with a remarkable strength of 54.4%.
