KILCHOMAN - 10 years - 2011 - Sherry Hogshead 100% Islay - 57.30% ABV
The Kilchoman Distillery was founded in 2005 at Rochside Farm, located near Machir Bay on the west coast of the iconic Islay island in Scotland. This renowned craft distillery was created by Anthony Wills, a former wine expert passionate about whisky, who aimed to develop a traditional, small-scale production respecting ancestral methods. Later, Mark and Rohaise French, owners of Rochside Farm, committed to using only local ingredients, perfectly aligning with their philosophy of sustainability and authenticity.
The operation is fully self-sufficient: barley is grown and malted directly at the distillery, while the entire maturation process takes place on site, as does bottling. The pure water used comes from a natural spring located on Cnoc Dubh, above Rochside Farm. Kilchoman Single Malt is made without chill filtration or added caramel coloring, thus ensuring unparalleled purity and aromatic richness. The standard alcohol content is 50% ABV, adjusted with local Islay water. Distillation, launched in November 2005, mainly relies on two stills with a total capacity of 90,000 liters per year, highlighting the craftsmanship and exclusivity of each batch.
About 80% of the spirit is matured in ex-Bourbon barrels from the Buffalo Trace distillery in Kentucky, while the remainder is aged in 250-liter Oloroso sherry butts from the prestigious Bodega Miguel Martin in Spain. In addition to these classic casks, Kilchoman explores unique maturations using Sauternes, red wine, rum, Port, Madeira, Cognac barrels, as well as carefully selected and secret experimental containers. This diversity contributes to the complex richness and originality of Kilchoman whiskies.
The presented edition, a Single Cask (No. 144/2011), was filled on March 24, 2011, in an Oloroso Butt and bottled on August 16, 2021, offering a rare and authentic 10-year-old expression, revealing the full richness and intensity of Islay's terroir.
