The iconic Caol Ila distillery is located on the wild isle of Islay, in the heart of Scotland. Considered the largest Single Malt distillery on the island in terms of capacity, it was founded in 1846 near Port Askaig. Today, Caol Ila is part of the prestigious portfolio of the global giant Diageo. A large portion of its production feeds various renowned blends, notably the famous Johnnie Walker. To meet growing demand, the old distillery was replaced in 1974 by a modern and larger facility. Since 2010, production has nearly doubled, increasing from 3.5 to 6.5 million liters per year, demonstrating its exceptional dynamism.
Caol Ila Single Malts were exclusively available through independent bottlers until 2002, when the official 12-year-old Caol Ila was launched. The malted barley comes from Port Ellen, while the stills, larger than those of other Islay distilleries, are only half-filled. This unique technique allows increased contact between the alcohol vapor and the copper, giving Caol Ila expressions a much less peaty profile than other Islay Malts, with a subtle, fine, and refined smoky character. Additionally, occasionally non-peated versions are offered, providing a delicate alternative for enthusiasts.
