The Domaine des Hautes Glaces is nestled at 896 meters altitude in the splendid Dévoluy Massif, right in the heart of the Hautes-Alpes. Founded in 2009 by Frédéric Revol, an agronomic engineer specialized in living systems management, this estate is fully committed to an eco-responsible approach. Its mission is to produce exceptional whiskies while promoting the natural fertility of the soils and drastically reducing its carbon footprint. Today, the distillery controls the entire production process in certified organic agriculture. The cereals are carefully cultivated on 5 distinct plots, each benefiting from unique climatic and geological characteristics that confer complexity and richness to the grains. Fermentation lasts about a week, followed by rigorous distillation carried out in two pairs of Charentais stills heated by direct flame: a 2,500-liter wash still and a smaller 700-liter spirit still, ensuring precision and finesse of the distilled spirit.
Moissons Rye is the second batch of this emblematic cuvée. This micro-cuvée is made exclusively from malted rye, highlighting the purity and aromatic intensity of the grain. The 2020 batch results from a meticulous blend of 11 casks, coming from 2 distinct plots – the Gabert and Vulson climates – and 5 vintages harvested between 2012 and 2017 (2012, 2013, 2014, 2015, and 2017). The aging in French oak barrels lasts between 3 and 8 years, combining coarse grain barrels as well as Cognac and Armagnac casks that bring depth and roundness to this unique whisky.
