Signatory Vintage, founded in 1988 by Andrew and Brian Symington, is today recognized as one of the most prestigious independent whisky bottlers in the world, offering an exceptional selection of authentic Single Malts.
The Caol Ila distillery is located on the iconic island of Islay, in the heart of Scotland. It is the largest Single Malt distillery on the island in terms of production capacity. Founded in 1846 near Port Askaig, it now belongs to the international group Diageo. A large part of its production supplies various renowned blends, notably Johnnie Walker. To meet growing demand, the old distillery was rebuilt in 1974 with larger facilities. Since 2010, production has almost doubled, increasing from 3.5 to 6.5 million liters annually.
Caol Ila Single Malts were exclusively offered by independent bottlers before 2002, the year of the official release of the 12-year-old Caol Ila. The malted barley comes from Port Ellen, while the stills, larger than those of other Islay distilleries, are only half-filled. This peculiarity promotes optimal contact between the alcohol vapor and the copper, giving Caol Ila a profile that is noticeably less peaty than most Islay whiskies, with a subtle and elegant smoky aroma. Furthermore, non-peated expressions are sometimes produced in limited editions, enriching the diversity of the range.
This exclusive bottling, distilled in 2011, has matured harmoniously for 10 years in second-use virgin oak casks, bringing refined complexity and a silky texture to this expression.
