Located in the heart of northern Martinique, on the majestic slopes of Mount Pelée, Habitation Bellevue benefits from a humid tropical microclimate as well as extremely fertile volcanic soils, ideal for cultivating exceptional sugarcane. In 1914, Gustave Crassous de Médeuil acquired the prestigious Rhumerie J.M from the Martin de Jean-Marie family, initiating a family tradition that continues to this day. Since then, the Crassous de Médeuil heirs have passionately and rigorously ensured the quality and authenticity of every bottle of Rhum J.M.
The sugarcanes, carefully cultivated and rigorously selected, are crushed within no more than an hour after harvesting to preserve cane juice of incomparable freshness, rich in subtle aromas and unique flavors. J.M is one of the few distilleries in Martinique to benefit from pure spring water, drawn directly from the depths of Mount Pelée. This crystalline water, naturally rich in minerals, gives J.M rums an exceptional texture and finesse.
The distillation, a true ancestral know-how, is always carried out in two traditional Creole-style copper columns, which sublimely reveal the typical aromas of agricultural rums. The barrels used for aging are rigorously selected and then perfectly charred, ensuring a harmonious maturation rich in character. Each year, the cellar master performs a meticulous topping up of the barrels with rums of similar ages to preserve the typicity and aromatic richness unique to each vintage.
