The Bimber Distillery is located in the heart of London, England. Founded by whisky enthusiasts Ewelina Chruszczyk and Dairusz Plazewski, this craft distillery is dedicated to creating an exceptional Single Malt, combining authenticity, character, and superior quality. Using traditional methods that are rare today, Bimber grows all its barley on a single farm, malting is done manually on the floor, followed by hand crushing. Fermentation is carried out slowly over seven days in unique wooden vats, handcrafted in their own cooperage. The direct heating of small copper stills imparts an unparalleled aromatic richness to the distillate, while careful aging in expertly selected casks ensures optimal maturation. The whisky is then blended and bottled directly at the distillery to preserve all its authenticity. Launched in May 2016, Bimber's first production quickly met with overwhelming success: 1,000 numbered bottles released in September 2019 sold out in just three hours. Since 2020, Bimber has expanded its range with innovative Single Malts that always embody finesse and originality.
This exclusive edition from Clos des Spiritueux is a La Maison du Whisky exclusive. Bottled by the distillery, this whisky has aged for three years in rigorously selected virgin oak casks to develop complex and elegant woody notes.
