The prestigious Caol Ila distillery is ideally located on the iconic Scottish whisky island, Islay, in Scotland. Recognized as the largest Single Malt distillery on Islay in terms of capacity, Caol Ila was founded in 1846 near Port Askaig. It is now an integral part of the global portfolio of the giant Diageo. A large portion of its production is destined for the creation of famous blends such as Johnnie Walker. To meet growing demand, the old distillery was replaced in 1974 by a more modern and larger facility. Since 2010, its annual production has almost doubled, rising from 3.5 million to over 6.5 million liters.
Until 2002, Caol Ila Single Malts were only available through independent bottlers. That year marked the official launch of Caol Ila with a minimum age of 12 years. The malted barley comes from the famous Port Ellen maltings. The distillery's stills are larger than those of other Islay distilleries and are only half-filled, which promotes optimal contact between the alcohol vapor and the copper, thus giving Caol Ila expressions a much less peaty character and a subtly refined smoky aroma. Additionally, some non-peated editions are occasionally produced, providing appreciated diversity.
Caol Ila Moch is a no-age-statement edition, lighter and more accessible than the standard 12-year version. The word "Moch" means "Dawn" in Gaelic, symbolizing this whisky's fresh and bright character.
