The Stauning Distillery is a key reference in the world of whisky in Denmark. Founded in May 2005 by nine enthusiasts with diverse backgrounds — a doctor, a cook, a butcher, a teacher, a helicopter pilot, and four engineers — this craft distillery aims to create a unique Danish whisky inspired by the iconic peated style of Islay Island, Scotland. The first distillation took place in August 2006, marking the start of experimental production with ongoing improvements and optimization of techniques. The following autumn, renowned expert Jim Murray enthusiastically tasted their new make, encouraging them to increase the initial annual production from 200-400 liters to an impressive volume of 6,000 to 8,000 liters, positioning Stauning as a major player in Scandinavian whisky.
The manufacturing process is distinguished by the exclusive use of local raw materials: rye and barley are carefully selected and floor-malted, respecting ancient Scottish tradition. The malt is then dried in a kiln where hot air is blown from below. To impart a smoky and authentic character, peat from nearby bogs is used to smoke the malted grain, adding a unique aromatic signature to Stauning's profile. After grinding and crushing, the mash undergoes a 3-day maturation before being distilled in two successive stages, first in a 1,000-liter pot still and then in a second 600-liter still. This traditional double distillation ensures remarkable purity and balance. The resulting new make is then aged in oak barrels for a minimum of 3 years, during which it develops complex aromas before being bottled as an exceptional whisky.
The El Clasico edition is a harmonious blend of rye and malted barley whisky, double distilled in directly flame-heated pot stills, guaranteeing rich aromas and remarkable finesse.
