Balcones Distilling is an exceptional distillery located in the heart of Texas, United States. Founded in 2008 by the passionate Chip Tate, it is housed in a former welding workshop beneath a bridge in Waco. After a full year of renovation including roof repairs, wall demolition, bricklaying, and pipe cutting, Chip Tate installed copper stills imported from Portugal and brought his innovative distillery to life. The first distillations began in 2009, revealing a selection of exceptional ingredients: blue corn grown in New Mexico and the very first locally grown malted barley in Texas. This meticulous and passionate approach quickly won over connoisseurs, with commercial success starting in 2010, spreading across ten U.S. states. In 2012, facing rapid growth, Chip Tate brought in investor Gregory Allen to support development. An internal dispute eventually led Chip Tate to sell his shares, leave the company, and abide by a non-compete agreement until March 2016. Today, distillation is led by the talented master distiller Jared Himstedt.
