The New Grove distillery is located in the north of Mauritius Island, a land of excellence for producing exceptional rums. The estate covers 7,000 hectares, of which 6,000 are dedicated to intensive cultivation of high-quality sugarcane. The Terra Milling Ltd. group rigorously oversees sustainable cultivation and meticulous management of these plantations, while Grays, the island's oldest distillery founded in 1838, remains the undisputed leader of Mauritian spirits. New Grove rums, crafted since 2003, embody traditional expertise combined with innovation.
New Grove stands out for its exclusive production of special and raw natural sugars, derived from 12 unique varieties of sugarcane and pure molasses. The annual harvest begins in June, in the heart of the southern winter, and ends in December, in full summer. Most rums are produced during the so-called "cold" season (June to August), using fresh molasses without any sulfur addition, and a specially cultivated house yeast for optimal fermentation. The fermentation, lasting 30 hours, produces a molasses wine carefully collected to undergo preheating followed by passage through a degassing column to remove unwanted impurities. The double distillation takes place first in a main distillation column equipped with 20 copper valve plates, then in a rectification column with 17 plates featuring caps and chimneys.
The process is refined through eight draw-offs that extract essential aromatic compounds while eliminating undesirable sulfurous and non-condensable components. The feints, recovered from the reflux of the rectification column, reach an alcohol strength of 94% ABV. This innovative distillation method allows adjusting the concentration of natural non-alcoholic components responsible for the rum's aromatic richness, according to the desired final style: light rums (100-120 g/hL), full-bodied (250-300 g/hL), or heavy (300-400 g/hL).
