\nEl Rey Zapoteco is an exceptional artisanal Mezcal, born from the ancestral expertise of the second generation of the Hernandez family in Matatlán, Oaxaca, in the heart of Mexico. \nThe production process begins when the agave reaches maturity, between 8 and 30 years depending on the varieties, at which point the leaves and roots are removed to keep only the heart called the "piña" due to its resemblance to a pineapple. These piñas are then cut and cooked for 4 to 7 days in a natural underground oven, combining wood and stones, offering a slow and traditional cooking that develops the unique aromas of Mezcal.
\nAfter cooking, the pieces are crushed in a stone "milpa" operated by a horse, which allows the extraction of the natural juice of the maguey. The must is then placed in wooden vats where it ferments thanks to natural indigenous yeasts, essential to preserve the authentic notes of the terroir. This ferment, called "tepache", then undergoes a double distillation in copper stills, guaranteeing a pure and refined aroma.
