La Escondida is a prestigious Mezcal brand crafted by the renowned company Grand Mezcal since 2014. This exceptional spirit is made from carefully cooked Espadín agave, slowly fermented and distilled using ancestral artisanal techniques directly from the Oaxaca region in Mexico. Thanks to this rigorous traditional method, La Escondida offers a unique aromatic profile, characterized by an intense smoky taste, enhanced by delicate spicy notes of pepper and a honeyed sweetness, providing an authentic and refined tasting experience.
After a long maturation of 7 to 10 years, the agaves are individually harvested under optimal conditions. The harvest begins with the meticulous cutting of leaves that can reach up to 1.5 meters in height. The heart of the agave, or piña, weighing up to 150 kg, is then carefully extracted to preserve its precious qualities. For cooking, volcanic stones are placed in the center of a pit dug directly into the ground, then covered with earth to create a traditional indigenous oven. The piñas are delicately placed on these hot stones, covered with several layers of agave leaves and earth, then slowly cooked for an entire week, ensuring an incomparable natural smoky flavor.
Once cooking is complete, the agaves are crushed using a volcanic stone mill weighing nearly a ton, powered by the strength of a horse, perpetuating a century-old tradition of manual extraction. The crushed pulp is then transferred to oak barrels where natural fermentation begins, lasting between 8 and 10 days. The fermented must is precisely distilled in two successive copper stills, ensuring optimal quality and remarkable purity of the mezcal. The final step involves the rigorous tasting by the master mezcalero, who validates the final product by savoring it in a traditional gourd called jicara, thus guaranteeing unparalleled gustatory excellence in every bottle.
