Clase Azul is produced in the Jalisco region, in the heart of Mexico. The agaves used grow in Los Altos de Jalisco, a region known for its mineral-rich red soil, high altitude, and unique climate that give the agave exceptional characteristics. The production follows a traditional and meticulous process: the agave leaves are removed to reveal the heart or piña, which is then slowly cooked in stone ovens to extract an essential natural sugar. This raw material is crushed and fermented using a patented yeast, ensuring Clase Azul Mezcal and Tequila have a complex, subtle, and perfectly balanced aromatic profile. Unlike Tequila, which is made exclusively from blue agave, Mezcal can be made from various agave species, each faithfully reflecting the terroir, climate, and local artisanal practices.
